Happy 2nd Birthday Be Mindful. Be Human.: Chocolate Cupcakes with Chocolate Frosting

C – I can’t believe we are two years old.

This year flew by. I feel like we were lot more mindful and more organized with everything we did this last year, than after our first year. Of course, there were a lot of human parts, too.

We had to celebrate with cupcakes again. This year, chocolate cupcakes. One of my favorites. I can’t remember where I got this recipe.

I just found it on a post-it note on my kitchen cabinet. It’s become my easy, go-to cupcake.

It’s a great cupcake. Simple and perfect in my book. I love that it’s super moist and not too sweet. The frosting actually tastes like chocolate, instead of just sugary brown stuff.

It’s so good. It’s one of those chocolate cupcakes where you can’t just eat one. I love it.

I wish I could make one or two of these cupcakes for all of the Be Mindful. Be Human. fans out there.

Ingredients
Cupcakes
  • 1 cup flour
  • 1 cup granulated sugar
  • ½ cup cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup milk
  • ¼ cup oil
  • 1 egg
  • ½ tsp vanilla
  • ½ cup boiling water
Frosting
  • ¾ cup butter at room temperature
  • ½ cup cocoa powder
  • 1 cup powdered sugar
  • ¼ cup milk
  • 1 tsp vanilla
Instructions
Cupcakes
  1. Preheat oven to 350 degrees. Line cupcake tins with cupcake liners.
  2. Mix flour, sugar, cocoa powder, baking powder, baking soda and salt in a medium bowl.
  3. In another bowl, mix oil, milk, egg and vanilla.
  4. Add liquid into dry ingredients.
  5. Add in boiling water slowly and mix well.
  6. Place ½ cup of batter into each cupcake tin.
  7. Bake at 350 degrees for 15 to 20 minutes.
  8. Remove and place on wired rack to cool. Let cool to room temperature before frosting.
Frosting
  1. Place everything in a large bowl. Mix well.
  2. Using a hand mixer, mix until light and fully. Should turn into a light brown color.
  3. Pipe the frosting over cupcakes.
  4. Serve.
  5. Enjoy!
