Finding Balance

The Joy of Finding Balance of Flavor and Sometimes Not So Much.

C – I like flavor.

Sometimes bold, sometimes super sweet, extra salty. But my favorite meals come from flavors that are well balanced. There’s something about having the perfect amount of salty, sweet, sour and spicy ratio that makes me want to keep eating.

My favorite dish has always been the Cambodian pickled mud fish basil sauce. It is so well balanced in salty, sweet, sour and spicy ratio if made right. I just can’t get enough of it.

I started to understand the balance of flavor on a business trip to San Francisco. Jim and I went to this wonderful restaurant where I had an amazing experience with flavors. Café Claude had an amazing frisée salad that I just didn’t want to end. Its blend of textures and flavors made the dish delightful. The crispy salty bacon pieces, the silky yolky egg with soft frisée and a wonderfully tart and sweet sherry vinaigrette, combined, just made me feel like I was in heaven.

The pork chop was the best pork chop I ever had. It will always be the best to me. It had a maple syrup brine with roast crab apples. The sweetness of the maple syrup and the saltiness of the brine combined so well with the tartness of the apples; they really complemented each other and made the entire meal. If I were at home there wouldn’t have been morsel left on the chop. From then on I wanted to find more things that tasted like this. I also wanted to create more things like this.

This blog is about finding the balance of flavors in the food that we make and eat. Finding balance can be simple or complex. There will be times when we don’t like what we make because the balance isn’t just right. That’s where the sense of mindfulness must come in. Being mindful is so important to making food taste great. We will let you know if the food isn’t good. Especially, if it isn’t balanced. I might even adjust the recipe for you so it will taste better. The main goal is to look for the best tasting food to enjoy, share and remember.
