Snack Week 2016: Grain-Free Granola

C – I love granola, but …

ever since I started eating gluten free, I haven’t been able to eat it.

Oats are gluten free, but most oats are processed in wheat processing facilities. The ones that aren’t processed in a wheat facility are usually really expensive. Not worth buying a huge amount just to make granola … in my honest opinion.

My struggle with finding a granola recipe just ended with this one. A grain=free recipe that meets all my snacking and breakfast needs.

It’s a really simple recipe, just replacing oats with more almonds. It’s still more expensive. But. it guarantees that there is no trace of wheat or gluten in it.

It’s also one of the most luxurious granola mixes you will ever eat. It’s addicting. Really addicting. It might be your snacking friend or your worst nightmare.

It’s not too sweet … just sweet enough. Crunchy, crispy and chewy. It’s amazing. I’m hoping Jim doesn’t eat it all before I get to it. I needed to take some home!

Why did I leave it all at the Be Mindful. Be Human. office? It’s too good. I may just need to make another batch to have at home.

Snack Week 2016: Grain-Free Granola

Serves: 4 cups
Ingredients
  • ½ cup unsweetened coconut flakes
  • 2 cups slivered raw almonds
  • ½ cup pecans
  • 1 cup walnuts
  • 3 Tbsp sesame seeds
  • 1 egg white
  • 1½ tsp ground cinnamon
  • 2 Tbsp coconut sugar
  • ¼ cup honey
  • 3 Tbsp coconut oil, melted
  • pinch of salt
  • ½ cup, each, dried fruit (chopped date, dried cranberries, dried banana chips)
  • ¼ cup roasted, unsalted sunflower seeds
Instructions
  1. Preheat oven to 325 degrees.
  2. In a mixing bowl, place coconut, nuts, sesame seeds, egg white, cinnamon, coconut sugar, honey, coconut oil and a pinch of salt.
  3. Mix well and place on a parchment lined baking sheet. Spread thinly.
  4. Bake for 30 minutes. Stirring every 10 minutes.
  5. Remove from the oven and let cool completely.
  6. Once completely cooled, mix in dried fruits and sunflower seeds.
  7. Serve or store in an air tight container.
  8. Enjoy!

 

This is the best granola I have had.

I love that grain can be optional in granola.
