Prosciutto Apple Cheese Pinwheels

C — Simple apple appetizers that Jim and I had lots of fun with.

I love things that are wrapped in meat. Its the best way to wrap almost anything. And, I wanted to try apples with goat cheese. Something simple, healthy and pretty.

Jim and I started to experiment with different types of apples and cheeses. It was interesting what we came up with.

One of our favorites was a combination of an arugula leaf, a slice of Fuji apple, a bit of goat cheese and some toasted walnuts wrapped in prosciutto.

We thought it was a nice balance with salty from the prosciutto, sweet from the Fuji apple, creamy and salty from the goat cheese and a nice smoky crunch from the walnuts. I really loved it. I couldn’t get enough of them.

Jim really liked the arugula, Morbier cheese, a slice of Granny Smith apple and prosciutto. It had a sharper cheese taste that went really well with the tart apples.

Prosciutto Apple Cheese Pinwheels

Serves: 12 pinwheels
Ingredients
  • 6 slices prosciutto, cut in half lengthwise
  • 12 arugula leaves
  • 12 slices cheese (6 slices of Morbier and 6 pieces of goat cheese)
  • 6 thin slices Granny Smith apple
  • 6 thin slices of Fuji apple
  • 6 roasted walnut halves, broken into pieces
Instructions
Prosciutto Fuji Apple Goat Cheese Pinwheels
  1. Place a strip of prosciutto on a cutting board.
  2. Place one arugula leaf in the center of the prosciutto strip.
  3. Place a thin slice of Fuji apple at one end of the prosciutto strip.
  4. Top apple with a generous amount of goat cheese. Make sure to spread goat cheese evenly on apple.
  5. Top with broken walnut pieces.
  6. Beginning from edge with the apple, cheese and walnut, roll prosciutto tightly to make a pinwheel.
  7. Place on serving platter and repeat process.
Prosciutto Granny Smith Apple Morbier Cheese Pinwheels
  1. Place a strip of prosciutto on a cutting board.
  2. Place one arugula leaf in the center of the prosciutto strip.
  3. Place a thin slice of Granny Smith apple at one end of the prosciutto strip.
  4. Top apple with a slice of Morbier.
  5. Beginning from edge with the apple and cheese, roll prosciutto tightly to make a pinwheel.
  6. Place on serving platter and repeat process.
  7. Once finished with all pinwheels.
  8. Serve and enjoy!

 

We also tried an Irish cheddar with both the Fiji and Granny Smith apples, but didn’t like it. We love this cheddar melted on burgers. But, here, it reminded me of elementary school and being served American cheese and apples. Yuk! NO THANK YOU. Let’s leave that childhood memory behind.
