Kale Cakes

C — Hi, Kale!

I haven’t eaten you in a while. I have really missed you. No, I didn’t get sick and tired of you. I just stopped eating you because I didn’t want to get tired of you.

Well, now I want you back. Please come back. I will treat you right.

I am going to dress you up and take you out. Everyone will want to be with you and all I know is that you are mine. Promise!

Kale, let’s go to a party tonight. Let’s do something different with you. Let’s dress you up as cakes! Not sweet cakes. Nope. Savory ones.

People will love you, Kale, combined with garlic, cheese, egg, salt and pepper.

Kale Cakes

Serves: 6 cakes
Ingredients
  • 6 oz kale, chopped finely
  • ½ cup ricotta cheese
  • ½ cup shredded Parmesan cheese + more for garnish
  • 2 large eggs, beaten
  • 1 clove garlic, minced
  • 6 pappadew peppers
  • Salt and pepper to taste
Instructions
  1. Pre-heat oven to 400 degrees
  2. In a medium size bowl, combine ricotta, Parmesan, eggs, garlic, salt and pepper.
  3. Add kale to the mixture and combine well.
  4. Place in six silicone muffin cups or a muffin pan and bake for 20 minutes.
  5. Remove from oven and let cool for 5 minutes before serving.
  6. Garnish each cake with a little shredded Parmesan a pappadew pepper
  7. Good hot or cold as appetizers or for breakfast with some eggs.
  8. Enjoy!
