Candy Week: Turtles

C – This is one of Jessica’s favorite holiday treats.

She’s been talking about turtles since the first time I baked with her. Yeah, Halloween is over. But, candy week isn’t. NOW is the start of prepping for the holiday season. It’s a perfect time to taste/test/sample/EAT turtles.

Since she has made these before, we thought we would put a new twist on making these by adding marzipan heads to our cute little turtles. We saw them in a cook book and wanted to copy them.

The recipe for marzipan they gave us didn’t work out well. It was sticky and gooey and hard to work with. We didn’t want to start over, since this was already the longest candy making day ever. So, we used it anyway.

If you are trying to add heads on little turtles, just make them with store-bought marzipan. We will have to find another recipe and post it later. We were truly disappointed. We couldn’t achieve anything successful with this cookbook.

We did make up for it with the caramel Jessica made. Soft and gooey, covered with delicious good-quality chocolate.

What’s not to like? It’s a holiday treat that everyone fights for.

I don’t think I have ever eaten an entire turtle all by myself, since it’s a rare treat for my family.

Candy Week: Turtles

Serves: 24 turtles
Ingredients
  • 1 cup cream
  • 1 cup sugar
  • ¾ cup corn syrup
  • ½ cup butter
  • ½ tsp vanilla
  • 1 cup pecan halves, toasted
  • 1 tube Marzipan
  • 2 to 3 drops of green food gel
  • 1 cup milk chocolate chips
  • 1 tsp butter
Instructions
  1. On a baking sheet lined with parchment paper, place four pieces of pecans in a circle to form legs.
  2. Mix food coloring gel into marzipan. Mix well until you get the desired color.
  3. Place a small ball of marzipan in between two of the four pieces of pecans.
  4. Place cream, sugar, corn syrup and butter into a sauce pan with a thermometer. Heat to 245 degrees. Remove from heat and add vanilla.
  5. Immediately top the pecans with caramel allowing the ½ the pecans to show.
  6. Let cool.
  7. Place chocolate and butter into a double broiler.
  8. Once completely melted, place chocolate over the caramel. Let cool and harden.
  9. Serve.
  10. Enjoy!
