Cabbage Week: Pork Meatball and Cabbage Soup

C – I like cabbage soup …

No, not the one for dieting. But, the one I grew up with. It’s a simple and easy soup that I think is delicious. When cabbage week came around, I knew I wanted to share this one.

This one is a bit different from the one I grew up with though. It’s more colorful.

The one I am use to was very colorless. Just light green from the cabbage and pork. This one has green cabbage, carrots, red onions and green onions.

I always eat with my eyes before my mouth, so I enjoyed the chance to change it up.

One of my favorite things about this soup is the meatballs. They are the star of the show. I try to make small meatballs so I can have one in every bite.

Place a few pieces of cabbage or vegetable on the spoon with a meatball and a perfect bite is there.

Ingredients
  • 1 pound lean ground pork
  • Salt and pepper to taste
  • 1 clove garlic, finely minced
  • 1 green onion, finely chopped
  • 1 clove garlic, whole and peeled
  • ½ head of cabbage, cut into 1 inch cubes
  • Soy sauce the taste
  • 1 carrot, thinly sliced
  • ½ red onion, thinly sliced
  • 1 green onion, finely chopped for garnish
  • hot sauce for garnish
Instructions
  1. In a medium bowl, add ground pork, salt and pepper to taste, minced garlic and finely chopped green onions. Mixed well.
  2. Roll meatballs out into 1 teaspoon balls, set aside.
  3. In a medium soup pot, place 10 cups of water and whole garlic clove. Bring to a boil.
  4. Add meatballs to the pot. Let simmer for 15 to 20 minutes or until balls are fully cooked.
  5. Add cabbage and cook for 5 to 6 minutes or until tender.
  6. Add soy sauce, salt and pepper to taste.
  7. Add carrots and red onion. Cook for about a minute.
  8. Ladle into soup bowls and garnish with green onions and hot sauce.
  9. Serve with cooked white rice.
  10. Enjoy!

 

I love the flavorful meatball. It has just a few ingredients, but it’s really tasty. Just pork, minced garlic, finely chopped, salt and pepper. Pepper is key to these meatballs. It brings out the flavor of all the ingredients.

It’s a healthy cabbage soup that isn’t just a diet cabbage soup. It’s so good to feel healthy.
