Breakfast Week: Apple Smoothie

C – A lazy morning …

Promising to make breakfast this morning means one thing, making smoothies. Jim never complains. He loves them. There’s nothing like a thick, hearty smoothie to start your day. This apple smoothie is a great one, too.

It took me a few tries to prefect. But, it was worth it. Somehow, I couldn’t seem to get the taste and the consistency right. This made my lazy morning a bit more challenging. I actually had to think!

My first attempt wasn’t too appetizing. Apples with the peel on in almond milk with a few spices wasn’t all that great. My experiment was bit grainy. It tasted OK. But, the texture just wasn’t pleasant.

My second attempt was the same recipe, but without the thick skin of the apple. Still, it just wasn’t good. The smoothie was not thick enough. I figured adding a banana would help a lot. It did.

After a few tries, I found that an apple, banana, almond milk, honey, vanilla extract, some cinnamon and nutmeg combo worked. Blend it all up. It was perfect.

Ingredients
  • 1 Fuji apple, peeled, cored and chopped into small pieces
  • 1 ripe banana
  • 1 cup unsweetened almond milk
  • 1 tsp vanilla
  • ½ tsp cinnamon
  • ¼ tsp ground nutmeg
  • 1 ice cube or crushed ice
Instructions
  1. Blend everything well in a blender.
  2. Serve.
  3. Enjoy!

 

It tasted like Autumn in a glass. Great for these Indian Summer mornings we have been having here.

I love the taste of everything mixed together. It’s almost like a healthy apple pie served as a drink. Yummy.
