Basil Week 2015: Basil Vinaigrette

I don’t mean being a Be Mindful. Be Human. client. This site is partly marketing for our real job. We don’t make much money here. We are strategic brand consultants. We work intensely with our clients to help them speak to their customers in meaningful ways. We help build brands and companies that will become very successful in the long term.

It’s a lot of work. Lots of long meetings that can be really draining for our clients. One perk our clients have is getting meals cooked from the Be Mindful. Be Human kitchen. If you schedule meetings starting around 11am or noon that are over two hours, chances are you will get lunch.

Most of our lunches are salads, soups or sandwiches. Most of them are easy to eat, but pretty elaborate. We make sure you’re well taken care of. If lunch is on the schedule, we check to see what you are willing to eat. Are you allergic to anything? Are you vegetarian? Not a problem. You can’t eat dairy. Ok, we can figure that one out. No onions or garlic on anything. I have handled that one more than I would like, sadly.

A few weeks ago one of our clients scheduled a noon meeting. We just finished shooting this basil vinaigrette and I thought making a salad with it would be great. Our client doesn’t do dairy or mayonnaise, so a simple salad with toasted crostinis would be the perfect fit. His only request was to make sure to have lots of meat.

I made a salad with chicken that looked like a beautiful flower arrangement. I wish I could have taken a picture of the finished product. It looked amazing.

To his surprise and delight the salad was packed full of flavor and was extremely nutritious. If I had made more, I think he would have taken seconds in a heartbeat.

Basil Week 2015: Basil Vinaigrette

Serves: ½ cup
Ingredients
  • ½ cup basil leaves, packed
  • 6 Tbsp white balsamic vinegar
  • 1 shallot, minced
  • Pinch of red pepper flakes
  • salt and pepper to taste
  • 12 Tbsp grapeseed oil
Instructions
  1. Place all ingredients except grapeseed oil into a food processor and blend until well incorporated.
  2. While the food processor is on, drizzle the grapeseed oil and blend until emulsified.
  3. Use on salads or to dress protein of your choice.
  4. Enjoy!

 

So, if you are ever a client of ours, try to schedule a lunch meeting with us. We may or may not be able to accommodate the coveted lunch meeting slot. But, if we ever do, expect a good filling lunch. We love cooking and feeding people.

It’s probably one of the most memorable things you get out of working with us … aside from making lots of money after building a really successful company.
