Bacon Onion Compote

C — My life just hit a new high.

I just made the most incredible thing ever. Bacon onion compote. Am I a sad case? No, because this is the best snack food EVER!!! Dipped with chips, eaten with meat, added to a burger. This thing is amazing. It can be eaten with anything.

I didn’t know what was going on with me this week. I have been craving the weirdest stuff, or maybe not-so-weirdest stuff. Not really sure. This week I really wanted something sweet and salty AND bacony. I mean really bacon intense. I think I could have eaten that whole pack of bacon in the refrigerator… but, I didn’t. I thought about it a few times, though. But, too much salt was going to make me bloat. I really wanted to make it a little sweet. But, I didn’t want to just sprinkle sugar on it again. That happens too many times. This time its got to be really good.

Bacon Onion Compote

Ingredients
  • 1 tsp grapeseed oil
  • 1 onion, thinly sliced
  • ½ cup bacon, cooked, chopped
  • 5 sprigs of thyme leaves, strip and discard stems
  • Salt and pepper to taste
  • 1 tbsp balsamic vinegar
Instructions
  1. Heat grapeseed oil in a pan on medium high.
  2. Add onions and saute for 15 to 20 minutes until soft and caramelized.
  3. Add bacon, thyme, salt and pepper. Cook for another 5 minutes.
  4. Take out of pan remove to a bowl to cool.
  5. Add balsamic vinegar.
  6. Serve with meat as a compote, on a burger as a topping, use it as a dip with chips or just eat it straight out of the bowl.
