Weeknight Dinners: Taco Tuesday with Ground Beef Tacos

C – My husband asks: “What are we having tonight for dinner?”

It’s Tuesday, babe, what do you think? “Tacos?” Yup, it’s Taco Tuesday. My husband thinks it’s cute that I have a themed day for a weeknight dinner.

For me, its really for convenience. I don’t have to think about what to make on Sunday for Tuesday’s dinner.

I love to cook ground meat and cut up fresh vegetables in advance to make tacos. When I get home at 7 o’clock at night, all I have to do is get out the already cooked meat and reheat.

Warm up some little tortillas and eat! It takes about 10 minutes. If you make enough, you’ll have leftovers. Enough for another dinner … with no more work.

Yeah, I try to use the fewest dishes during the week. We don’t have a dishwasher. So, the least amount of dishes makes less work for me to clean up.

Plus, with more leftovers, it means I can have tacos more than one night. I really can’t get sick of tacos.

Tacos with ground beef might be the easiest tacos to make. Ground beef doesn’t dry out as much as other meats. Some times I use ground bison. It’s about the same texture, with less fat.

Weeknight Dinners: Taco Tuesday with Ground Beef Tacos

Ingredients
  • 1 Tbsp grapeseed oil
  • 1 pound ground beef
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • ¼ tsp paprika
  • a pinch of Cayenne pepper
  • ¼ tsp cumin powder
  • ¼ cup water
  • salt and pepper to taste
  • 12 small corn or flour tortilla shells
  • 1 cup cabbage, shredded
  • 1 cup salsa
  • ½ red onion, sliced thinly or pickled red onions
  • 1 or 2 sliced radishes, sliced thinly
  • ½ cup shredded cheese
  • cilantro to garnish
Instructions
  1. Place grapeseed oil into a medium sized saute pan and heat on medium high heat. Add ground beef in into pan. Break apart and cook fully. About 3 to 5 minutes.
  2. In a small mixing bowl, add garlic powder, onion powder, paprika, cayenne, cumin powder, salt and pepper to taste. Add ¼ cup water into bowl and mix well.
  3. Pour seasoning mixture into saute pan. Mix well and cook until all the water has dissolved and the seasonings are incorporated.
  4. Heat up tortillas in a small pan or griddle. Keep warm underneath a paper towel until ready to serve.
  5. Assemble the tacos by placing a tortilla on the plate.
  6. Topping with a little cabbage, taco meat, shredded cheese, radishes, onions, salsa and cilantro.
  7. Serve.
  8. Enjoy!

 

I love that I can have different versions of tacos. … with a lot of different vegetables and sauces.
