Halloween Week 2015: Black Rice Macaroni Pasta with Orange Peppers and Sauteed Veggies

C – I was quite surprised and delighted to find black rice macaroni pasta at my local Asian grocery store.

Perfect time for Halloween and being gluten free. I didn’t want to scare anyone’s pants off this year. I was in a festive mood and just plain tired of eating so much sugar for Halloween. I was also curious what this tasted like.

This is a really easy recipe.

Just toss a few things into a pan and cook the pasta. It took about 30 minutes to make. I think this would be a great meal to start a Halloween night of trick or treating.

Fill the kiddies bellies with something easy to make and good for them before they fill up on all things bad.

There’s nothing really spooky about this recipe, other than the black rice pasta … that actually turns purple.

Hopefully your kids will think it’s cool and not gross. Even if they do, just ask them to taste it and they will love it.

I liked the texture. It’s similar to regular pasta, just healthier … I think.

I loved the crispy vegetables with the pasta. Of course, adding an egg makes anything taste good. If you are a meat eater add some cooked sliced meat into the saute and enjoy.

Ingredients
  • 2 cups black rice macaroni pasta
  • 1 Tbsp grapeseed or canola oil
  • 4 button mushrooms, thinly sliced
  • 1 garlic clove, minced
  • ½ red onion, sliced
  • 1 orange bell pepper, seeds and stem removed and sliced
  • 2 Tbsp soy sauce
  • Salt and pepper to taste
  • A pinch of red chili flakes
  • 2 eggs, fried sunny side up
  • Sriracha to taste
  • Chopped chives and cilantro for garnish
Instructions
  1. Bring 6 cups of water to a boil and cook black rice pasta according to package directions.
  2. In a saute pan on medium high heat, add oil. Add mushrooms and a pinch of salt and pepper. Saute until the edges of the mushrooms are golden brown.
  3. Add garlic and saute for about a minute or until fragrant.
  4. Add red onions and saute until tender. About 3 minutes. Add pinch of salt and pepper.
  5. Add bell pepper and saute for about 2 minutes.
  6. Add soy sauce, red chili flakes and another pinch of salt and pepper.
  7. Add cooked pasta. Mix well. Turn off heat.
  8. Place on serving platter or dishes.
  9. Top with a fried egg and Sriracha. Garnish with the chopped chives and cilantro.
  10. Serve.
  11. Enjoy!

 

Add a little hot sauce, if you like. It will spice up anyone’s life.
