Grilled Peaches with Mint Ice Cream

C – This was Jim’s recipe, but he didn’t like it

… as much as I did. When Jim suggested we do grilled peaches for a dessert, I didn’t like it. We already did a grilled peach recipe didn’t we? He said, “No. We did a grilled nectarine recipe and it wasn’t for dessert. It was for lamb loin chops.”

He still didn’t win me over. Nectarines and peaches are so similar. Why bore people with such a simple repeat? I wanted more. I wanted to add something to it. Luke added honey and goat cheese to the grilled nectarines in his lamb recipe to make the nectarine flavors shine.

I wanted to change things up, but still have the same thing happen to the peaches. Also, I wanted it more like a dessert. Add a few baking ingredients to make the flavor profile of the peaches pop. Vanilla extract and almond extract were the perfect thing. I also wanted to caramelize the peaches while grilling. The perfect thing for that was brown sugar.

It turned out perfectly for me. The peaches were a bit under ripe, so Jim didn’t like them all that much. It was great for me. I am not much of a fan of mushy, warm fruit. The best part was the flavor. The almond and vanilla extract really helped the peach flavor shine through.

Grilled Peaches with Mint Ice Cream

Ingredients
  • 4 ripe medium peaches
  • 1 tsp pure vanilla extract
  • ¼ tsp almond extract
  • ¼ cup dark brown sugar
  • 1 pint ice cream, flavor of your choice. Suggestion: mint, vanilla or banana
  • Toasted sliced almonds
Instructions
  1. Cut the peaches in half and remove the pit. Toss them in a bowl with the vanilla extract, almond extract and brown sugar. Set aside for 15 minutes.
  2. Preheat a grill with a medium-high heat.
  3. Grill skin side down until skin is slightly charred, about 3 minutes. Turn and grill on the other side until you get nice grill marks, about 3 minutes.
  4. Remove from grill and let cool for a few minutes.
  5. Slice thinly.
  6. Serve with ice cream and sprinkle with toasted, sliced almonds.
  7. Enjoy!

Fresh Mint Ice Cream recipe

I ate it with mint ice cream. I was in heaven. Nice peaches with a creamy, fresh mint ice cream. It was perfect for a summer day.
