Savory Crepes

C — OK, OK, OK. I cheated.

I know that I like making things from scratch. I am the girl who would rather spend $10.00 on making ranch dressing, than buy a bottle for $2.00. I really want to know what goes in the stuff I eat. So, I really cheated this time. I had to make crepes from the store bought stuff.

I don’t think I will get over this soon. I have been trying to make good crepes for years, but I haven’t been successful. I haven’t found the perfect recipe. None of the recipes I’ve tried works out. They are complicated. They turn out too soft or too hard, too watery or too thick or just taste strange. You get the point… I hope.

But, NOW, I found the good stuff! I really mean this IS the good stuff. They taste good and crispy when you want them to be, and soft and chewy when you want them to be. Their so amazing. I can’t believe that this came from a package. It’s so good. I can’t seem to get over it. AND I know what’s in it.

 

I mean look at the ingredients on the package.

This company is doing good things. And, I’m not even getting paid to promote them (sorry, Jim). I’m paying them! Oh, by the way, it’s probably one of the most expensive packages of pancake mix out there. But, it’s sooooo worth it. Found it at Whole Foods.

Try this. Just follow the directions on the side of the package for making crepes and you’re all set. Add your favorite toppings and it will blow your mind.

Today, I made savory crepes. I love the sweet stuff, but I wanted something a little different.

Mushrooms, onions, cheese and bacon. You can’t go wrong.

Savory Crepes

Ingredients
  • 1 tablespoon grapeseed oil
  • ¼ red onion, sliced thinly
  • 2 scallions, chopped
  • 4 dried shiitake mushrooms, re-hydrated and sliced thinly
  • 6 ounces button mushrooms, sliced thinly
  • 4 slices bacon, cooked and chopped
  • Salt and pepper to taste
  • 6 ounces gruyere cheese, grated
Instructions
Savory Crepes
  1. Heat oil on medium-high heat. Add onions and saute for 2 minutes.
  2. Add button and shiitake. Let cook for 3 minutes.
  3. Add cooked bacon, scallions, salt and pepper.
  4. Set aside until crepe shells are complete.
Crepe Shells
  1. Follow directions on the side of the package.
Forming Savory Crepes
  1. Once crepes are complete, lay them flat on a plate one-at-a-time
  2. Add savory filling in the middle.
  3. Add a sprinkling of grated cheese.
  4. Fold bottom and top over, then flip to show the back side.
  5. Grate more cheese on top. Serve with a side salad.
  6. Enjoy!
