Chicken Week: Fried Forbidden Rice with Chicken

Over 600! So, sometimes we forget what we’ve made. Jim wanted to make a side dish with wild rice that we’ve already made. It just sounded really familiar. I had to figure out something else to make.

It had to involve chicken, since it is chicken week. Luckily, I was craving fried rice. So, making fried rice with wild rice would be the perfect thing.

I was surprised with the taste. It was delicious, but very different from regular fried white rice. The flavor and smell is floral.

It might sound odd, but for some strange reason it smells like a healthy fried rice. Of course, it is. I think it’s because it’s really a water grass seed.

I love my fried rice with lots of stuff. This recipe is perfect for me. Now, I just have to control myself and not eat the entire big bowl full.

Chicken Week: Fried Forbidden Rice with Chicken

Ingredients
  • 2 Tbsp canola oil
  • 3 eggs
  • 2 boneless, skinless chicken breasts, cut into bite sized pieces
  • 1 clove garlic, minced
  • 2 Tbsp Gourmet sauce (found in the Asian foods section or at Costco in the sauce isle)
  • Soy sauce to taste
  • Salt and pepper to taste
  • 1 carrot, chopped
  • ¼ cup frozen peas, thawed
  • ¼ cup red onion, chopped
  • 4 cups cooked Forbidden (Wild) rice
  • 1 green onion chopped
Instructions
  1. Place about a tablespoon of oil into a saute pan and place all the eggs. Cook and stir until scrambled. Remove from pan and set aside.
  2. In a large saute pan, add about a tablespoon of oil and heat on medium high. Add chicken. Cook for about 2 to 3 minutes or until no more pink is showing.
  3. Add garlic and Gourmet sauce, 2 tablespoons of soy sauce, salt and pepper to taste. Mix well.
  4. Add carrots, peas and onions. Cook for about 2 to 3 minutes or until carrots are tender.
  5. Add the wild rice. Mix well.
  6. Add the cooked eggs. Mix well. Cook for about 2 minutes stirring constantly to make sure it is heated through.
  7. Taste the stir fry and adjust the seasoning if needed.
  8. Sprinkle green onions over top.
  9. Serve.
  10. Enjoy!

 

Of course, I had to eat it for breakfast, lunch and dinner. It’s healthy enough to do so. I guess it isn’t so bad eating the entire recipe.

Good idea, Jim, for making something with wild rice. I am glad we could find something new.
