Artichoke Week: The 5-Minute Artichoke

J – How did I ever miss this one?

It almost doesn’t deserve a post … except, I’m betting a few people don’t know this trick. Luke, of course, suggested it with “here’s a really easy dish for artichoke week …” Yup!

Take one artichoke. Double wrap in plastic wrap.

The only trick is to very tightly double wrap the artichoke so it will retain all the moisture.

Ingredients
  • 1 to 4 fresh artichokes
  • Plastic wrap
Instructions
  1. Double wrap artichokes individually in plastic wrap.
  2. Cook on high in a microwave for 5 to 6 minutes. Add about 1 minute for each additional artichoke, up to 4 total. Ours is a 1000 watt microwave. Adjust cooking time according to your power level.
  3. Unwrap. Cool.
  4. Eat.
  5. Enjoy!
